Robert E. Schifferle, DDS, MMedSc, PhD, received his BA and MA in Chemistry from Buffalo State College and his DDS with Thesis Honors and his PhD from the University at Buffalo. He has a Certificate in Periodontology and MMedSc degree from Harvard University. He currently is Professor of Periodontology and Director of Pre-doctoral Periodontics. He is a member of the the Editorial Board of the New York State Dental Journal and Peer Review Panel of the Journal of Periodontology. He is a Diplomate of the American Board of Periodontology and has served as a Trustee of the American Academy of Periodontology.

Nutrition in General Health & Oral Health



This course will review the role of nutrients in maintaining overall health with a focus on how nutrition is related to oral health. The first half will review macronutrients (foods ingested in gram quantities) such as, protein, lipid, and carbohydrate. The second half will review, vitamins and minerals, the micronutrients (nutrients ingested in milligram and microgram amounts). Oral conditions associated with either a deficiency and/or excess of specific nutrients will be discussed.


At the conclusion of the course, participants should be able to describe:

  • The differences between the macronutrients and the micronutrients

  • The role of proteins, lipids and carbohydrates in health and disease

  • How vitamins & minerals play a role in health

  • The role of nutrition in general health and oral health
